Ingredients
- 300 grams red cabbage
- 1 tbsp vegan butter
- 0,5 deciliter red wine
- 1 teaspoon rice
- 7,5 deciliter vegan broth
- salt
- pepper
Instructions
- Cut the head of red cabbage in half, remove the hollows on the cabbage and cut the rest into thin noodles.
- Finely chop the onion and heat the butter in a pan and fry the onion briefly. Drizzle with red wine, add rice, broth, cabbage, salt and pepper and mix. Cover the pan and let it cook for 10 minutes.
- When the cabbage is cooked, mix all the ingredients in a blender. Transfer the soup to a cooking pot again and cook on low heat for 2 minutes. Serve in a suitable bowl.
Notes
Tip:
- You can sprinkle the soup with grated cheese if you are not vegan.
You can serve the soup with apple chips.
